Winter Reserve: The Science of Late-Season Depth
Sonoma County local Winter Reserve honey is a testament to the complex chemistry of late-season nectar. Harvested from the final, deep-colored flows of Eucalyptus, Manzanita, or late-blooming California buckwheat, this honey often possesses a higher mineral content and a more complex sugar composition. Its resulting dark, amber color and molasses-like flavor are a result of this unique late-season foraging. This reserve is naturally slower to crystallize and provides a rich, lingering sweetness that beautifully concludes the annual cycle of the Sonoma County apiary.
Our honey is ethically harvested, always left raw (never heated), and contains zero additives. Produced seasonally in small batches.
